Our Chef - David William Grimshaw

Award-winning Executive Chef David William Grimshaw has been
at the helm of Shaughnessy Restaurant's talented kitchen brigade
since 1999. Bill's style, anchored by classic training, focuses
on creating innovative dishes that are influenced by international
techniques and flavours. Working with reputable, local suppliers,
Bill creates dishes built around fresh, organic, seasonal,
indigenous ingredients, and incorporates unique presentation
and simple twists into every creation.
Bill began his career in the late eighties after graduating
from Toronto's George Brown College with honours, and winning
the prestigious Escoffier Society Award. Bill apprenticed
under Brian Morin and went on to become Chef at several renowned
restaurants in Ontario and the Eastern United States before
moving to Vancouver in 1999. His own positive experience as
an apprentice has motivated Bill to focus heavily on teaching
his team to become better chefs - encouraging strong teamwork,
and enabling them to achieve significant hands on experience
in all aspects of the kitchen.
